Mung Bean Salad with Prosciutto & Pomegranates

My husband invited a friend over for dinner and on the spur of the moment I cooked some I mung beans.  Actually, I had bought them a couple of hours earlier. I had read about them in the past and I assumed they had to taste like lentils, so I began by boiling them. 
I drained them, salted them a little and added chopped parsley & spring onions, a squeeze of lemon juice, the seeds of half of a pomegranate and 2 thin slices of prosciutto
Mixed all together and tasted to see what it's like. Absolutely divine. Took some quick shots before I dished it on the plates. Sorry for the presentation, I will remake this salad asap and post new (more handsome) photos, but if you decide to give it a try, you will not be disappointed. :)



PS. If you want to go for the vegetarian option, discard the prosciuttto. It will be equally delicious.
