'Morning Sunshine: Creamy whole grain wheat with caramelized orange peels & coconut chips

Don't you just love weekend mornings when you crawl out of bed, grind the coffee beans with bleary eyes, then go back to bed to take lazy sips of the sweet black essence which is meant to wake you up, and return to your book till ... you are hungry? And what would be the perfect weekend breakfast bordering on brunch?

Milky whole grain wheat with orange zest and pumpkin seeds, almonds and coconut chips



Type of food: Vegetarian/Fusion

Difficulty: easy

Cooking time time: 12 hours (for the wheat grains to soak) and 30 minutes (to put everything together) 

Preparation
In the evening soak the wheat grains in clean water. For two people you'll use a glassful of grains. In the morning, change the water and let them soak for an extra hour or two.

You will also need:
3 oranges (peel their skin and squeeze them to get the juice)

3/4 glass of milk

2 spoons sweet cream

1 tablespoon honey

4 tablespoons brown sugar

a handful of almond flakes (or crushed almonds)

a handful of pumpkin seeds

a handful of coconut chips

2 generous tablespoons orange blossom water

1 slice of butter

Method

Finely peel  two oranges and boil the skins in half a glass of water with 2 tbsp of brown sugar. Squeeze the oranges and pour the juice over. Let them simmer for 20 minutes.

Drain the orange juice, discard the boiled orange peels and transfer the lot to a different pot. Work in the whole wheat grains, add the milk and simmer for 10 more minutes.  Allow the grains to absorb around 80 % of the milk and orange juice.

Add the honey, the orange blossom water, the sweet cream, and finally the nuts, chips and seeds.

To decorate, caramelize the peels from the remaining orange in butter and brown sugar, sprinkle some coconut chips and pumpkin seeds over and enjoy! And if you want to go back to bed to savour this delightful dish, all the better.

The grains will melt in your mouth, the milk will wrap everything in a light and creamy consistence, the oranges will imbue your treat with bitter sweetness, the chips and seeds will be crisp and crunchy, while the caramelized peels will be divine... Try it!

  3. Imi place la nebunie ideea si arata delicios. O intrebare: Trebuie puse la inmuiat de seara boabe de grau? Normale? Cum sunt cele de la plafar?

  4. Da, le-am pus la inmuiat seara. Sint graunte normale, cele care se numesc arpacas. Le-am vazut si in metro, insa, nu stiu de ce, prefer sa le cumpar de la plafar :) Love, xx
